Summer’s officially here! Not that we ever give our blenders a vacation the rest of the year, but summer is the perfect time to blend up a delicious, fruity mocktail recipe. Blend up a pitcher of these mocktails to serve at a party or to enjoy as you watch the sun slip beneath the horizon.

Spinach is so versatile when it comes to neutral flavors in smoothies. That’s why we’ve included it here. I know it may seem a little strange (at first) to include spinach in a mocktail recipe, but bear with me! Anytime you can add a little extra boost of vitamins and minerals, fiber, and other nutrients into your day is plus. Spinach is chock full of iron, vitamins A, C, and K, and loads of dietary fiber to keep your tummy happy.

 

Why Our Green Smoothie Peach Mocktail Recipe is Special

This mocktail recipe is a little different than our typical green smoothie recipes— thanks to the kombucha. We use kombucha here for several reasons. First, kombucha is rich in enzymes and probiotics due to the natural fermentation process. Keeping our digestive tract in tip-top shape is key to overall good health. Kombucha is made from fermented black, green, or white tea that is sweetened with sugar which feeds the culture, known as a SCOBY (symbiotic culture of bacteria and yeast). And second, it’s lightly effervescent or fizzy. Nowadays you’ll find kombucha in just about every flavor you can imagine and in every grocery and convenience store refrigerator case. If you haven’t been a kombucha fan before, we implore you to try blending up this mocktail recipe to reap the benefits and introduce it into your diet in an easy, delicious way. To be honest, I was a little nervous the first time I popped open a bottle of kombucha. I’d heard so many things about, so I had to try it for myself. I’m glad I did. I really enjoy a daily glass or two and the benefits I get from it. Bonus points if I roll that into my daily smoothie (or mocktail!) too. It’s a great replacement for soda.

When it comes to the fruit in this recipe, we really love peaches. They are summer’s best fruit, in my not-so-humble opinion. The kombucha I used in this recipe contains a kick of jalapeño which marries nicely with the sweet, juicy peaches.

 

INGREDIENTS

2 cups fresh spinach
16 ounce kombucha
3 cups frozen peaches
2 tablespoons coconut sugar
1 lime, juiced

INSTRUCTIONS

  1. Blend spinach and kombucha together until no more leafy chunks.
  2. Add in the frozen peaches and blend again until creamy.
  3. Squeeze lime juice and coconut sugar onto 2 separate small shallow trays/ bowls.
  4. Dip rim of cup into lime juice and then into sugar to coat the edge of the glasses.
  5. Fill glasses with green smoothie and enjoy!
