Corn Salad

This is a quick and easy salad that you can make ahead of time and pull it out when you’re ready to serve.

Ingredients

  • 2 cup fresh or frozen corn kernels
  • 3 medium tomatoes, seeded and finely diced
  • 4 tablespoons fresh-squeezed lime juice
  • 2 tablespoon finely chopped fresh cilantro
  • 2 teaspoon minced hot green Chili peppers
  • 1 teaspoon salt

Directions

  1. In a medium bowl, gently combine corn kernels, tomatoes, lime juice, cilantro, chili peppers, and salt. Cover and refrigerate until ready to be served.

Yields 3 cups
