Oven Roasted Fish with Tomatoes, Onions and Plantains

This meal is fast, easy tasty and cleaning is a breeze. A great way to get out of the weekday rut.

INGREDIENTS
½ Cup dry white wine
2 ½ Tablespoons paprika
2 Tablespoons salt
1 Tablespoon black pepper
2 Tablespoon onion powder
2 Tablespoons garlic, chopped
1 Tablespoon cayenne pepper
3 (6 to 8-Ounce) whole or fillet fish, trout, snapper or mackerel
4 Large tomatoes, chopped
1 Large sweet onion, julienned
2 Tablespoons cilantro, chopped
8 Thin slices lemon
3 Tablespoons butter
2 Plantains

DIRECTIONS
Preheat the oven to 400 degrees F and line baking sheet with foil paper.
Combine first seven ingredients in a medium bowl to make a marinade.
Arrange cleaned fish on the baking sheet, followed by the tomato, onion, and cilantro, drizzle marinade and then lemon slices and butter. Bake for 20 to 25 minutes or until fish flakes off.

While fish is in the oven cut plantains in half then slice the halves in the middle. Cover with water in medium sauce pan and boil for 25-30 minute or until fork runs through it.
