  1. Place spinach, cilantro, ginger and water into blender jar. 
  2. Blend until smooth and leafy chunks are gone. 
  3. Add cucumber, apple, lemon juice, and coconut milk to blender. 
  4. Blend again until smooth.
  5. Serve immediately or refrigerate for up to one day.
